If 2 Nato countries start fighting each other, what are the other Nato countries supposed to do?

Is anyone really expecting Assad to suddenly discover sanity? UN "peacekeeping forces" are tasked to monitor and observe POST-conflict periods. Stated purposes include NWO confidence building, power sharing, electoral support (for whom is not stated), strengthening the rule of law and economic and social development. The 1956 Suez Canal eventual agreement was a success. As for the arab/Israeli, India/Pakistan and everything since 1991, not so much.
Assad is the guy with a sectarian extermination goal which he will pursue, "allies" and enemies not withstanding. Meanwhile Syrians are being bombed into mini pieces and gassed while international power brokers strategize about parceling out Iraq and how many Kurds will survive. All that remains before the outbreak of major war is the choosing of sides.
Just a reminder that the Olympics approach and rocket boy is still playing.

Probably try to stay neutral at first, and issue statements that "this
is completely unacceptable." And then pick sides as time goes on.

The trick here is the two nato countries just have to "on press" have good relations. If they issue statements about wanting peace talks and "making an effort" whilst bombing one another (or preparing to) they are fine. People don't care much about actual reality so much as putting on a good face and being a good sport about it all. Let them eat cake

If it's Turkey, then none of the NATO countries would help them. Most would try to stay neutral. Greece might fight Turkey, hoping to get foreign aid, but with its population malnourished already, the Turks would probably crush them.
